I’m not quite sure what is your issue, but from what I know, when you use a remote SQL server you need to use a sql based credentials not Windows authentication. First off, I’m not a vSphere guru but thanks for the compliment :)
For me, I started my steps by reading a lot of blogs and doing hands-on…I also find the product documentation to be extremely useful, though I noticed that nearly no one care to read it…speaking of which, you VCP exam will mostly come from the documentation itself…

If you want professional training, then VMware Education Services has quite rich courses with great content! You can check them out to see what interests you.
